Inherited Baked Lemon Pudding Recipe

I recently had the pleasure of devouring this at a family dinner. My Aunt passed on this recipe that has been in our family for years. Although I enjoy lemon; chocolate is usually my first choice. Maybe not anymore....


Granny Brown's Baked Lemon Pudding


2 Tbsp butter
1 cup sugar
4 Tbsp flour
1/2 tsp salt
3 Tbsp lemon juice
grated zest of 1 lemon
3 eggs (separated)
1 1/2 cups milk


Instructions

  1. Preheat oven to 350 degrees.
  2. Cream butter, add sugar and cream together.  Add flour, salt, lemon juice and rind.
  3. Beat egg yolks, add milk and combine with sugar/cream/flour mixture.
  4. Beat egg white till stiff and fold into the above mixture.
  5. Pour into buttered baking/deep souffle dish.  
  6. Place dish in a pan of hot water and bake.
  7. Bake 45-55 minutes until set.  Serve chilled or warm with fresh fruit of choice.

Serves 5.
